I thought I would add in a couple of recipes that are easy to do and good for those with allergies. Clearly, everyone has different allergies so I want to encourage you to modify recipes to work for you and your family. I will try to highlight the things that work for us. You will need to recognize the difference between intolerances and allergies. Here are a couple of recipes that we like.
Potato Soup
1 bag hash brown (cubed) frozen potatoes (read the ingredients for soy and wheat if those are an issue for you. You can also peel and cube about 6 potatoes
2 onions chopped
1 rib of celery chopped
4 cubes bouillon (this is always tricky with allergies, read the ingredients)
4 cups water
1 Tbsp parsley
1/4 tsp black pepper
1/2 tsp salt
13 oz can coconut milk
Combine all ingredients in a slow cooker. Cook on high 3-5 hours or low 8-10. Stir in coconut milk at the end. Top with dairy-free cheese and green onion slices
Sausage Balls
3 cups gf bisquick
2 cups shredded dairy-free cheese. I like violife (1 bag)
4 oz cream cheese (cashew or other that you like)
2 pkg sausage rolls (if you are gf check the label)
1 1/2 cups dairy-free milk (almond, cashew, coconut, oat, hemp)
2 Tbs sage
2 Tbs paprika
Heat oven to 350 degrees. Spray pan or line with parchment paper. Mix dry ingredients and then add milk. Once fully combined, add sausage and form into 1 inch balls. Bake for 18-20 minutes. Refrigerate or freeze leftovers.
Christmas Salad
12 oz mixed greens
2/3 cup sliced almonds (omit if nut allergy)
4 mandarin oranges (cuties, halos), peeled and segmented
1 pomegranate seeded (or they come in a container at the grocery story by POM)
blueberries (optional)
Dressing
2 cloves garlic (I buy the already cut up kind - if that is the case, use about 2 Teaspoons)
2 tablespoons champagne vinegar or apple cider vinegar
3 Tablespoons honey
2 Tablespoons Dijion mustard
1/4 tsp salt
1/4 tsp black pepper
1/4 cup olive oil
Whisk together all the ingredients except the olive oil. Slowly drizzle that in at the end while whisking continuously. I always set the dressing to the side and let each person dress their salad as they want.
