Cooking for those with allergies is always challenging but I am committed to sharing my r recipes. Jeff, my husband has constantly reminded me that I need to write them down and share them. Why put all this work in and then not write it down? So, I have decided to listen and hopefully you will start seeing more recipes soon. Here are two for today. The first is a blondie. It is basically a non-chocolate brownie. Baking is one of the hardest things to do without eggs, but this turned out really well. The second is a modified Chicken and Dumplings. Being from the south, we love chicken and dumplings but it has a lot of butter and bread in it. This worked pretty well. Not the same, but a pretty good substitute.
DF, GF, EF (egg free) Blondies
1/2 tsp baking powder
1/8 tsp baking soda
1/2 tsp salt
1 cup walnuts, crushed
1 cup light brown sugar
1 tsp vanilla
1 cup applesauce
Preheat oven to 350 degrees. Mix pancake mix, baking powder, baking soda and salt together. Add in crushed walnuts and chocolate chips and mix. (you could delete the nuts if you are allergic, but I would increase the chocolate chips to 1 1/2 cups). Melt butter in microwave until melted (approx 1 min 30 sec). Stir in brown sugar. Allow to cool for a few minutes. Mix into pancake mix. Add in applesauce and vanilla. Gently mix well. Grease 8x8 pan. Bake at 350 degrees until center is firm. (30-40 min). Allow to cool and cut into bars.

GF, DF, EF Chicken "Dumplings"
1 box chicken broth
4 cups of water
1 onion, sliced or diced (your choice)
2 celery stalks, chopped
1 Tbs Bell's Seasoning
1 tsp weber roasted garlic and herb seasoning
1 tsp salt
1 tsp pepper
1 whole chicken or 4 chicken breasts
CoraBella Rice Gnocchi (I found it at the Asian food store)
Boil water, chicken broth, chicken, onions, celery, bell's seasoning and garlic and herb seasoning until chicken is cooked through (no longer pink). Remove chicken and shred. Keep water boiling and add rice gnocchi and butter, salt and pepper. Once the gnocchi float to the surface, wait two more min then remove them and place in a separate bowl. Drizzle with olive oil. Placed shredded chicken back into soup. To serve, add gnocchi to bowl and ladle soup over it. (You cannot leave the gnocchi in the soup because it will fall apart). Enjoy.
